Having grown up in a macrobiotic home – perhaps “Macrobiotics Central,” as the second son of Michio and Aveline Kushi, Dr. Kushi has witnessed the transformation of society from one in which brown rice and tofu were alien concepts to one in which locally-made artisanal tempeh is available in Brooklyn flea markets. Meanwhile, as an epidemiologist, he has seen the evolution of medical research from the view that food and nutrition was dismissed as unimportant to the now widespread recognition that it is central to our health and well-being. The convergence of these seemingly disparate trends has resulted in a remarkable societal transformation. From a personal journey of discovery, Dr. Kushi will point to some of the key contributors to these parallel trends toward creating a better world.
